Creme Brulee (6 portions)

Ingredients :

Cream 忌廉                                              500ml

Sugar 糖                                                   88g

Egg yolk 蛋黃                                           150g

Vanilla extract 雲呢嗱香精                        4g

 

Methods :

1. Warm the sugar and cream together in a small pot until all the sugar melts.

2. Whisk the egg yolk and vanilla extract together in a bowl.

3. Slowly add the cream and sugar into the egg yolk and vanilla extract.

**Mix and stir at the same time to prevent the egg yolk from over cooking.

4. Put the mixture into 6 porcelain ramekins evenly. 

**Use a blow torch to remove the bubbles from the surface.

5. Steam the mixture for around 7-8 minutes.

6. Refrigerate the custard for several hours until it cools completely. 

7. Add about a teaspoon of sugar on the custard and form a thin layer evenly.

8. Melts the sugar with a blow torch until it turns into golden brown or even a bit black.
