Sesame balls with lotus seed purée

Ingredients:

Glutinous rice flour 300g

Wheat starch 20g

Baking soda 2g

Lard 60g

Water 210g

Granulated Sugar 95g

Lotus deed purée 150g

White sesame seed 15g 

 

 Methods:

  1. Mix wheat starch and boiling water together. Then bake it for 2 minutes.
  2. Add granulated sugar in the lard and mix well.
  3. Put glutinous rice flour on the table, and make a hole in the centre. Put wheat starch and lard with sugar. Then make a dough.
  4. Make the dough into a long shape , divide it into small pieces.
  5. Take one piece, and shape it like the shape of a bowl. Then put lotus seed purée into the centre. Seal the ball.
  6. Put the balls into water and roll over sesame until the whole surface of the ball are covered by sesame.
  7. Deep fry sesame balls. When the sesame seeds turn into brown color and the size of the balls expand about a double of the original size, then it can be served.
