Broccoli soup

Ingredients:


Broccoli 1.2kg

Water 2.5L

Onions 100g

Celeriac 40g

Leeks 100g

Butter 40g

All-purpose flour 40g

Cream 200ml

Milk 100ml

Salt season to taste


Method:

  1. Wash and dice broccoli, onions, celeriac and leeks.
  2. Sauté onion, celeriac, and leeks with butter.
  3. Add broccoli and continue to cook.
  4. Cool down a bit and then add flour.
  5. Add heated vegetable bouillon.
  6. Bring to a simmer and stir constantly.
  7. Cook until vegetables are soft.
  8. Blend the soup until it is smooth.
  9. Bring to a simmer.
  10. Add cream and milk.
  11. Add salt (season to taste).
