Broccoli soup
Ingredients:
Broccoli 1.2kg
Water 2.5L
Onions 100g
Celeriac 40g
Leeks 100g
Butter 40g
All-purpose flour 40g
Cream 200ml
Milk 100ml
Salt season to taste
Method:
- Wash and dice broccoli, onions, celeriac and leeks.
- Sauté onion, celeriac, and leeks with butter.
- Add broccoli and continue to cook.
- Cool down a bit and then add flour.
- Add heated vegetable bouillon.
- Bring to a simmer and stir constantly.
- Cook until vegetables are soft.
- Blend the soup until it is smooth.
- Bring to a simmer.
- Add cream and milk.
- Add salt (season to taste).
