Chocolate Gelato

Ingredients: (500ml)

Cocoa powder 可可粉 120g

White sugar 白糖 140g

Glucose 葡萄糖 70g

Milk 牛奶 300ml 

Cream 忌廉 120ml 

Milk powder 奶粉 30g 

Gelatine powder 魚膠粉 3g 

Hot water 熱水 200ml 

 

Method 做法

1. Mix all 80g white sugar, 40g glucose, milk, cream, milk powder, gelatin powder together and stir it. Add hot water and boil it with gentle fire until it becomes milk pulp. When cooling down, put it into the refrigerator at around 5℃. Reserve it.

2. Warm the milk up. Stirring the remaining white sugar, glucose and cocoa powder by using another utensil. Then, add the warmed milk and evenly stir it to become the chocolate pulp. 

3. Put milk pulp into chocolate pulp and stir it. Then, stir it by using the mixer again.

4. Put the above pulp into an ice cream machine. Stir it until it becomes smooth and straight.
